Chateau Fonbadet Pauillac 2016 $88

Dense, dark garnet colour, drawing on purple in its youth. The aroma consists of black and red fruits, roasting, licorice and leather. The Pauillacs are vigorous and tannic, which softens with age which allows the tannins to melt and give a nice and round structure.

This wine is deep magenta, intense and brilliant. The bouquet reveals aromas of ripe black fruits and liquorice, underlining the grapes' perfect maturity, whilst keeping a pretty freshness and good minerality. On the palate, the attack is precise, very dense and complex.

Chateau Pontet-Canet Pauillac 2011 $188

( 5th Growths Bordeaux Wine )

The bouquet leaps from the glass and yells Pauillac - thanks to its graphite seam interwoven through the black fruit. Over ten minutes, tobacco scents join the fray and it develops what you might call mint fresh aromatics. The palate is medium-bodied and remains understated on the entry, perhaps exaggerated by the exuberance of the nose. However, there is no question that this is a refined, pure and seamless Pontet-Canet with crme de cassis and cedar inter-layered on the sustained finish.

Château Clerc Milon Pauillac (Grand Cru Classé) 2004 $225

( 5th Growths Bordeaux Wine )

A still youthful dark purple, the wine has a finely constructed nose which develops fresh, precise aromas of blackcurrant and black cherry mingled with sandalwood and graphite. From a precise, round attack, the palate offers pleasant substance, fine texture and harmonious tannins, lifted by forward and crisp black fruit. The long and delectable finish shows beautiful balance, rounding off a classic Clerc Milon nearing full maturity.

Chateau Pichon Longueville Comtesse de Lalande Pauillac (Grand Cru Classe) 2009 $438

( 2nd Growths Bordeaux Wine )

Deep garnet colored, the 2009 Pichon Longueville Comtesse de Lalande is a little reticent to begin, slowly giving way to notions of warm black cherries, blackcurrant cordial, stewed plums and sautéed herbs with hints of damp soil, tobacco and beef drippings. Medium to full-bodied, the palate is packed with tightly wound black fruit and earthy layers, framed by ripe, fine-grained tannins and lovely freshness making for a long, lively finish. Classic!
