Somerville Shiraz is the uber cool premium release wine from the Drogemuller family Shiraz vineyard at Paracombe.
This wine was named after James ‘Jas’ Somerville an early pioneer who settled in Paracombe in the late 1800’s. A man of vision and fortitude, he was the first to plant vines in the district in 1903. Paul and Kathy transplanted the centurion old vines to their property in 1997, an amazing effort!
In a special late harvest style, the grapes for this wine were left to fully ripen gaining rich flavour intensity. The fruit was carefully handpicked. Slow, cool ferments for up to four weeks, combined with gentle hand plunging in small open tanks brought gentle extraction of flavours and colours.
Culinary Recommendation: To serve 16 C - 18 C. Good match with meat dishes, a rare rib eye steak would be ideal, lamb and pork will also pair well, mushroom for vegetarian option.
