Introduction to French Wine In Languedoc From Abbaye Fontfroide

The vineyard, located in Fontfroide, has been in existence for more than 900 years when the Cistercian religious order planted vines to make wines. The Rule of St. Benedict, which governed the life of the community, allowed them to drink wine. Slowly, over time, the monks selected the best plots, learned the “terroir”, chose the best grape varieties, and developed their winemaking methods. Their wine became quite famous. Nicolas de Chevron-Villette’s philosophy of the “new winegrower” is to make wines with a history! A highly diverse but little-known wine appellation, this winegrowing couple’s achievements makes them stand out from the rest and the beauty of a place which bears the marks of the centuries – that’s how you could sum up the originality of the wines of Abbaye de Fontfroide Abbey.

The vineyard in the heart of the Corbières has always been cultivated in a reasoned way, taking advantage of a varied grape variety.

From this heritage know-how, wines with an atypical signature are born which combine freshness, fruit and finesse. They are the quintessence of this terroir, both shaded and ventilated, which allows slow and controlled maturation.

(80% Chardonnay, 20% Vermentino)

Via Hominis bears witness to the time when the agricultural production of the Cistercian monks made the Abbey of Fontfroide a crossroads of exchange and sharing for the whole of Europe. Simple and warm wine for every day, it can be opened at will to delight our palate with its finesse and freshness.

VIA HOMINIS White quantity, Limpid color, luminous yellow. Notes of acacia flowers, white-fleshed fruits, round, generous with a touch of nervousness.

Culinary Recommendation: To be served at 8 - 11 C. Good match with aperitif, salads, grilled fish, parillade of fish, Tielle à la Sétoise, cooked cheese

Abbaye Fontfroide Via Hominis Rouge 2018 $42 (UP $48)

Destemming and pressing straight after picking. Fermentation under controlled temperatures (28°C).

Mechanical juice extraction using the regular pumping-over technique. Maceration of between 10 to 15 days after fermentation.

Aged in traditional semi-buried concrete vats covered with Languedoc bricks. The wine is Purply red. Small red and black fruits. Pleasant, fresh and uncomplicated with long-lasting aromas

Age of the vine: 12 years

Ageing potential: 2 years

Culinary Recommendation: To be served at 16 C to 18 C. Good match with everyday dishes, charcuterie, roast chicken or Basque-style spicy chicken, Mexican fajitas, pizza, soft cheeses.
