Aromatic complexity Generally we distinguish between three aromas group:
1/ Primary aromas: These are the aromas that the vines developed before the harvest. They depend on the grape variety and the terroir (raspberry, cherry...).
2/ Secondary aromas: Secondary aromas are produced during the fermentation (bready, sour...).
3/ Tertiary aromas: Tertiary aromas appear during wine aging (nutty, vanilla...).
