The Vrignauds’ family, settled in the village of Fontenay-près-Chablis, have been vine growers for five generations.
They began planting in 1er cru Fourchaume with the Côte de Fontenay climate in 1955.
In 1975, they planted the rest of their vines around Fontenay près Chablis and also Fleys for the 1er cru Mont de Milieu.
It is a quality-conscious family with an absolute belief in the importance of work in the vines, respect for nature and biodiversity.
In 1999, Guillaume Vrignaud started to bottle his first wines and decided to build a new winery. 2009 marked the start of organic certification by Ecocert.
According to him, organic farming is not an end, it is a way of thinking, a way of revealing the terroir.
In 2012, all Guillaume wines across their 28 hectares were organic certified and have been ever since.

The mineral base supports and then blends into the fruit of a wine made from berries respected as much as possible, whether in the vineyards, in the press or at the farm where the use of inputs is limited.
"This is a quite ripe and rich Chablis but it adheres to the regional template very well, with modest 12.5% alcohol, fine acidity and a sense of minerality on the finish. The nose is quite ripe with peachy almost tropical fruit, fine lees and sourdough, a touch of parmesan and fresh herbs. Great to see so much complexity coming out of un-oaked chardonnay. It is just a touch sour-edged but there is so much fruit here. The length is excellent."
