For four generations, Cascina Chicco has made the decision to cultivate and vinify the best vines of Roero and the Langhe. A choice of the most privileged areas, which over the years, has let us identify the best vines to express the unique interpretation of each terroir.
Today, Cascina Chicco oversees over 50 hectares of the most historic vineyards of Canale, Vezza d’Alba, Castellinaldo, Castagnito, and recently, Monforte d’Alba, where wine is made from two historic and prestigious crus: Ginestra and Castelletto.
Castagnito, Piedmont, Italy. In the countryside of Castagnito is a particular hill named Costa, mentioned in the history of the Nebbiolo vine in ancient documents; it is particularly suited for the production of a fne and elegant wine. The average age of the vineyards is 20 years. The yield per hectare is very low, allowing us to obtain a Langhe Nebbiolo of high quality.
The soil is clayey with sand.
The harvesting is done in two periods spaced with one week in between. For 4 - 5 days the maceration develops in stainless steel casks, after which the wine rests in traditional casks for six months before being bottled.
As with all of the vineyards for our red wines,the vine thinning is done at two separate periods. The harvest is carried out by hand by a specialized staff during two separate periods, as well, with 6-10 days in between.The wine ferments in steel macerators to guarantee correctskin-must contact and an adequate extraction of color. After, the wine is transferred to 600-liter tonneaux, 2000-liter oak barrels, and in wooden barrels that have been used at least two times already. Here, the wine undergoes malolactic fermentation for 12-15 months before being transferred,once more, to steel.The wine is bottled in June and put on the market in September, two years after the harvest date.
Intense ruby in color, this wine has profumes of raspberry and nuances of rose and vanilla. In the mouth it has soft tannins that balance the warmth of its substantial body. Traces of dried red berries, currant, and raspberry.
Recommended serving temperature: 18° C. Pairs wonderfully with meat-based dishes, and is well-suited for international cuisine. Especially delicious with medium-aged, high quality cheeses.
