Sommelier's Notes

In 1973, it was in the heart of the Côte des Bar that Jacques Robin at 21 and Annie Robin at 18 planted their first vine. Now led by Aude, Séverine and Sébastien Robin, they continue driving the 22 plots scattered over 47 km to the extreme to assure you with one and the same voice: "words have meaning, the essence of mine is expressed in flavors… ”

The Côte des Bar vineyard is made up of 22 plots clinging to the slopes of the various valleys of the Aube, Arce, Ource and Seine.

Limestone marls and their clays support our vines, cultivated for many years in a reasoned manner, and today directed towards High Environmental Value.

This Champagne is revealed in a beautiful pale yellow coat with white gold reflections. Many trains of fine bubbles twirl and braid a persistent crown.

The nose is elegant and expressive with a pleasant blend of white flowers, acacia, apple blossoms and ripe white fruits, conference pear, Canadian reinette. Some notes of fresh hazelnuts, Bourbon vanilla and croissants add complexity.

The palate is fresh and thirst-quenching with vine peach associated with orange and Chanteclerc apple. All in delicacy and fluidity, this Champagne has a good length with a finish on gooseberry and vine peach.

Long-lasting fresh citrus fruit aroma, lemon, light floral aroma, fruity flavor dominates, the entrance is fresh and refreshing

To be enjoyed as an aperitif but also with a scallop tartare, with a citrus fillet of Saint Pierre or with a baked turbot, for example.

Culinary Recommendation: To serve 11 C - 14 C. Good match with Shellfish, Crab and Lobster
