Domaine Jean Pierre & Alexandre Ellevin is located 4km outside of Chablis in Burgundy and it is composed of a total of 13 ha of Kimmeridgian clay-limestone that includes wines from the following appellations: Petit Chablis, Chablis and Premier Cru Vaucoupin and Vosgros.
It was in 1975 that Jean-Pierre, a 5th generation wine maker developed the Estate and specialized in the production of Chablis in the village of Clichée . In the 1980’s Jean-Pierre married his wife, Brigitte Cerveau, also from a winemaking family with a history dating back to the French revolution. After his studies and various travels around the world, their son Alexandre joined the Estate in 2003. Today, Jean-Pierre and Brigitte cultivate 16 hectares, which is exclusively Chardonnay.
The Ellevins have always worked the vine and the estate practices sustainable viticulture listening to the vines and finding the “terroir” expression.
Juicy citrus acidity that is perfectly balanced by a silky richness and round mouthfeel that is elegant and alluring. Key-lime, pear and crushed stone salad flavours linger with a white flower and honeyed leaves on the finish.
“Pretty, deep golden yellow color, beautiful shine. Fragrant, flattering and very delicate nose, which opens in the register of white flowers. There is a nice aromatic freshness. Interesting texture and balance. The ample and fruity matter is supported by a nice acidity on the finish. A concentrated and pleasant length, which offers a nice minerality. "
Aging : 7-8 years
Culinary Recommendation: To serve at 12 C - 14 C. Good match with Mango Chicken.
