2017 was a cool dry year with long winter nights. This ensured a longer ripening which adds to the minerality and finesse to this vintage. The drought caused the vine to push its roots deeper in search for water which will be an overall benefit to the future.
Grapes where picked at optimum ripeness, destemmed and pressed. The juice was settled for 48 hours at 10˚C and then racked off the lees to selected French oak barrels. This wine was Fermented in 35% new oak and 65% in Stainless Steel tanks. After 9 months the wine was blended and fined for
Deep red with a dark purple rim in colour. Primary flavours of deep purple plums, prunes, cherry notes are balanced with forest floor and savoury notes. Dark chocolate, roasted coffee beans and warm spice notes add to the complexity. The dark purple fruit follows through from the nose in this full-bodied wine, a complex and deep core enamours the taste buds whilst the tight tannins and balanced acidity adds length and longevity to this beautiful example of Pinotage.
Ageing Potential: Already drinking beautifully but will cellar well for another 10 years. Bottled with a natural cork closure, in order to ensure a unique ageing capacity.
Culinary Recommendation: To serve 16 C - 18 C. Good match with venison, ribeye steak or lamb; preferably Karoo!
