The Manara winery was established in 1950 in San Floriano in the heart of Valpolicella Classica.
The owners have been running it for three generations, maintaining local wine-making traditions with growing experience, passion, and a strong bond with the Valpolicella Classico region.
The estate stretches over 11 hectares in the districts of San Pietro in Cariano, Negrar, and Marano di Valpolicella.
After three generations and with its fourth gradually joining in, the Manara family is carrying on its wine-growing tradition with passion and knowledge, maintaining the strong bond with the land that saw it originate and grow.
The plant breeding system is the “double pergoletta” (pairle).
They produce top quality Corvina, Corvinone, Rondinella, Molinara, and other minor varieties of grapes and only the best go for further winemaking which eventually gets reflected in their wines.
Manara El Rocolo Recioto della Valpolicella DOC is a sweet red wine from the Cantina Manara.
The grapes are from an unique vineyard sited on the hillsides of the designated Valpolicella Classico region in the district Negrar, made up of a series of terraces held back by dry stone walls called “Marogne”, where we can find some descendants of historical grapes varieties.
The grapes are harvested carefully selected for the process of drying that lasts on average 4 months.
They are gently crushed, followed by a maceration on the skins and a slow fermentation in stainless steel tanks for 40 days.
15% of the wine in French barrique for about 12 months, whereas the aging of the remaining 85% is made in stainless steel tanks. Aging in the bottle varies from 6 to 12 months.
It’s perfect to be drunk with desserts, especially panettone and short pastry, we suggest to try it with chocolate also. Serve in a small crystal glass at ambient temperature.
