Bollinger Special Cuvée Brut Aÿ Champagne N.V.

WINE TYPE: Sparkling

BOTTLE SIZE: 750 ml

Sommelier's Notes

Special cuvée is a champagne emblematic of the savoir-faire of the Bollinger house.

This champagne takes its name "Special Cuvée" from the British agent Georges Bollinger in 1911.

He found the expression "Brut sans année" inappropriate for a champagne of such subtlety.

Bollinger Special Cuvée Champagne is Bollinger's Brut Non Vintage benchmark wine.

Bollinger only produces two different blends; that designed for the Special cuvée, and that which will become Grande Annee.

Following the harvest period, Bollinger's decisions on blending are not made before January.

The blend for the Special cuvée is an ideal version of the classic Champagne blend, using the different grapes of a given year from a variety of crus, with the addition of older, reserve wines.

This blend necessarily incorporates subtle variations each year whilst remaining consistent to a style. It is, therefore, the hardest of all to make.

Coming from a blend of 60% Pinot Noir, 25% Chardonnay and 15% Meunier, more than 85% of Grand and Premiers Crus vines are used to make this champagne.

The maturation time in cellar is more than 2 times higher than the rules of the appellation

In a golden colour, a distinctive sign of black grape varieties, this Champagne has a very fine bubble.

The nose expresses a very beautiful aromatic complexity with aromas of ripe fruit and spices with notes of roasted apple, compote and peach.

The palate reveals a subtle combination of structure, length and liveliness with aromas of pear, brioche, spice and fresh nuts. A dense and subtle Bollinger style with fine bubbles like velvet.
