For four generations, Cascina Chicco has made the decision to cultivate and vinify the best vines of Roero and the Langhe. A choice of the most privileged areas, which over the years, has let us identify the best vines to express the unique interpretation of each terroir.
Today, Cascina Chicco oversees over 50 hectares of the most historic vineyards of Canale, Vezza d’Alba, Castellinaldo, Castagnito, and recently, Monforte d’Alba, where wine is made from two historic and prestigious crus: Ginestra and Castelletto.
Castagnito, Piedmont, Italy. In the countryside of Castagnito is a particular hill named Costa, mentioned in the history of the Nebbiolo vine in ancient documents; it is particularly suited for the production of a fne and elegant wine. The average age of the vineyards is 20 years. The yield per hectare is very low, allowing us to obtain a Langhe Nebbiolo of high quality.
The soil is clayey with sand.
After evaluating the sugar and acidity levels to determine the optimal harvesting period, the harvested grapes rest for one night in a refrigerator cell at 0°-2° C.The pressing is done the day after.The maceration is done between skin and must, an interesting choice for a white wine, which gives the wine much fragrance, structure and longevity. Temperatures are kept cold in all the operations in order to maintain the color. The wine then rests only in stainless steel casks, and is bottled in March.
The taste is intense and persistent, with fragrant apricot and apple scents, then final notes of camomile and spice. In the mouth, it is sapid and harmonious with good structure.
Recommended serving temperature: 12-13° C. This wine is recommended with hors d’oeuvre, rice, pasta and fish.
