In 1973, it was in the heart of the Côte des Bar that Jacques Robin at 21 and Annie Robin at 18 planted their first vine. Now led by Aude, Séverine and Sébastien Robin, they continue driving the 22 plots scattered over 47 km to the extreme to assure you with one and the same voice: "words have meaning, the essence of mine is expressed in flavors… ”
The Côte des Bar vineyard is made up of 22 plots clinging to the slopes of the various valleys of the Aube, Arce, Ource and Seine.
Limestone marls and their clays support our vines, cultivated for many years in a reasoned manner, and today directed towards High Environmental Value.
This champagne is revealed in a pretty pale yellow color with white gold reflections. A myriad of fine bubbles play in the light and weave an elegant persistent crown.
The nose is fresh and flattering with notes of yellow flowers, apples, pear, fresh almonds associated with yellow citrus notes.
The palate is thirst-quenching with a resumption of white fruits and touches of white peaches.
The finish is quite long on blood orange and citron.
This aperitif champagne can also accompany baked turbot, fish mousse or Burgundy ham
Culinary Recommendation: To serve 11 C - 14 C. Good match with turbot in the oven, a fish mousse or a Burgundy ham.
