Sommelier's Notes

Rosarubra is a biological and biodynamics winery situated in a small town called Pietranico in the province of Pescara which is roughly 390 meters above sea level. The approximately 30ha represent a unique, pleasant and unspoilt place where biological and biodynamic agricolture blends with its own essence.


The company, biologically certified in 2003, adopts a biodynamic agricultural system improving the soil fertility and food product quality.


You can come across the highest number of “palmenti” dug in the rocks in the territory around Pietranico. These tubs, dating back to the middle ages were real squashing tools used especially for this particular procedure since ancient times.


An oasis of 30 hectares characterised by a territory with a splendid terroir, where the same environment is a nest created by the nature, that protects of it and it protects the biodiversity.


Cultivated lands are joined by forests of oak and in some cases they are surrounded by them. The forest, much more than the vineyards themselves, overlooks and gives character to the landscape.


Indeed the forest is natural and very little has changed. Much has been generously left though for the pleasure of respectful fruition and to the lives of many wild animals.


An ancient vineyard produces Shamàn. 


Created by the selective collection of the best grapes, enough to produce a single barrel from 50 hl, focusing on the oldest vines of the estate.


Dense, with a dark red colour, visually occupied by an extraordinary origin, resulting from late harvests in the vineyard. 


It strikes your sense of smell for its full integrity of the fruit, of harmonious woody tannin and for its unrivalled aromas. Full and round, offers unrivalled feelings of tannic elegance to your mouth.


Thinning techniques, the late harvest and a long stay in one large barrel round out the essence of this wine.

A bright, impenetrable garnet red with a magnificent texture.
The nose is very intense, with a floral note of geranium, rose, a fruity note of blackberry jam, plum, cherry, and a spicy note of vanilla and tobacco.
A generous, pulpy taste, warmth and softness well balanced with important but smooth, round, non-invasive acidity and tannins and a delicate sapidity. The flavor is in perfect harmony with the sense of smell, which coexists with berries, humus, earth, cloves, licorice and a roasting that accompanies the long, delicately bitter finish.

A wine that needs time to reveal itself, so it is necessary to open it a little before serving it, maintaining a variable temperature between 16 ° and 18 ° and with a large glass with a wide brim. You can taste it both alone and in good company, best if combined with structured and tasty dishes. Appropriate also with aperitifs, starters, red meats, vegetarian dishes, and semi to long-seasoned cheeses. Let’s imagine an ​​Italian first course, lasagna Bolognese, roast lamb, eggplant parmigiana, also fragrant cheeses like gorgonzola or a pecorino. We would match it with a first course: rigatoni with pumpkin and porcini mushrooms.
